We offer a full line of commodity pork cuts as well as a full line of premium Duroc pork cuts from Compart Family Farms. The Duroc is an American-Heritage breed dating back to the 1830s. The Duroc hog is best known for displaying great marbling, rich color, high moisture content and an exceptional taste. At Compart all of the Duroc hogs are raised from start to finish on their single-source family farms in environmentally controlled facilities to keep them comfortable. They only feed their hogs natural grains grown on their farms- no antibiotics are fed there. Each hog is hand selected for processing to ensure the full, natural flavor true pork connoisseurs have come to expect.
We have a local source for pasture-raised heritage pork from Fudge Family Farms. Mr. Fudge has preserved an old breed that is naturally adapted to the outdoors, pasture-raised. His hogs are a cross between old type Durocs and Berkshires. Fudge hogs are raised on farms across Alabama and Tennessee on small family farms. They are raised without the use of hormones or antibiotics and allowed to forage on pasture and forestland. The marbling, tenderness, and flavor of this pork is amazing.
We offer St. Louis style, country-style, spare, and loin back ribs. The chops come custom cut, whether boneless, center cut, end cut, frenched to the bone, or smoked. Boston butts, bellies, shanks, cheeks, smoked hocks, and most everything else pig – you name it and we got it.
