At Evans Meats & Seafood we like to work with smaller producers. Smaller operations allow more access into the inner workings of the operation, like knowing the cattle buyer or the guy who owns the boats. It allows you to have a relationship with the people who make the operation tick, not just talking with a salesman. The smaller operations are typically family-oriented and work with and have long ties with other family farms. This family value has a direct impact on animal conditions, how much room they have to live, how clean their water is, and the ingredients that go into their feed mix. They prioritize attention to detail and overall care for the process. Oftentimes, farmers and fishermen are really interested in feedback from the end user, the chef, or store owner. They have a genuine concern for how the product performs, it’s a reflection of their work.

Beef

Our beef is from the American Mid-West—a farm and grassland region known for its abundant corn crop and heritage breed cattle. The region’s climate is ideal for heritage breeds, and the cattle are raised and fed on small family farms. We take time to make sure our suppliers share our values: heritage genetics, proper feeding, and humane handling.

Although genetics is the number one ingredient for great-tasting beef, proper diet, and humane handling also enhance and promote quality. Great beef requires not only quality cattle but also quality care.

Consistency is really important. Our preferred, single-plant beef companies are able to maintain high standards in cattle carcass trim levels. Carcasses are trimmed at above-industry standards on a continual basis, and beef primal yields are the best in the industry.

Pork

Pork is a Southern tradition. We take great pride in providing our customers with the highest quality pork for their own traditional and gourmet recipes. Evans Meats and Seafood offers a variety of pork cuts from small family farms committed to breeding American heritage pork. We source from farms that feed their hogs natural grain and have a strong commitment to antibiotic-free and hormone-free farming.

We work with farms that raise Duroc pigs, Berkshire pigs, and Chester White pigs.  They are all known for exceptional marbling, rich color, high moisture content, and unparalleled taste. These three quality breeds are adapted to the outdoors, and the farms we work with ensure that the pigs are given ample space to forage on pasture and forest land. Each pig is hand-selected for processing to ensure the full, natural flavor that true pork connoisseurs expect.

We offer St. Louis style, country style, spare, and loin back ribs. Evans Meats chops are custom cut, including boneless, center cut, end cut, frenched to the bone, or smoked. We are prepared to deliver: Boston butts, bellies, shanks, cheeks, smoked hocks, and most all other desirable pork products.

Lamb

We offer a full line of fresh domestic lamb from Elysian Fields. All lambs are fed only natural grain without the presence of growth hormones or stimulants, and hay that is tested to ensure adequate nutrient levels.

Our imported lamb from Ovation comes from four unique regions of New Zealand. Each area is made up of different soil structures, climate, sunlight, and grass types resulting in subtle yet different flavor profiles.

Poultry

At Evans Meats, we offer a sized, boneless-skinless breast program so that customers can maintain consistency on the plate. Whole birds are available split, quartered, or 8-piece cut.

Perdue Farms is our baseline poultry offering that provides an affordable, well-raised bird that is all-natural, cage-free, and antibiotic-free.

We source all our natural poultry from Joyce Farms in North Carolina. The Naked Chicken brand, a component of Joyce Farms, offers an alternative to factory-farmed commodity chickens. Joyce Farms ensures that their Naked Chickens are all-natural and held to superior standards. Their chickens are raised cage-free on family farms and are fed a wholesome grain diet without antibiotics, hormones, or any other artificial ingredients. Joyce Farms has also developed a unique program with small farmers in the Piedmont area to produce products previously only offered in Europe. Their mission is to preserve heritage breeds, Regenerative Agriculture farming methods, and artisan production. The Heritage program offers the Poulet Rouge Fermier, an authentic Label Rouge chicken from France regarded as the best in the world, as well as the Pintade Fermiere, an authentic French Guinea Hen, and the Spanish Black Turkey, which is the most flavorful and succulent turkey that top chefs ask for by name.

Veal

We offer a full line of both grain-fed veal and milk-fed veal. We do in-house portion-controlled rack chops and loin chops cut to the customer’s specifications. We are proud to offer our customers the very best in grain and milk-fed veal products.

We sell Le Quebecois veal, the first veal program to combine USDA-approved all-natural status, humane animal husbandry, full traceability, and sustainable farming practices. It has no added growth hormones or antibiotics, and the calves are humanely raised in a group setting. The calves’ nutritious diet consists of whole grains, corn, and unlimited fresh water. This natural diet gives the meat a rose color and a subtle, pure flavor ideal for professional cooking.

Game

We source directly from niche suppliers and receive our game products weekly by air and refrigerated trucks, ensuring the freshest game proteins available. We choose to work with small, family-owned game farmers to make certain that every individual specialty game item has received special attention. We have an extensive inventory, including free-range duck, foie gras, game birds, elk, venison, bison, wild boar, and rabbit products. We strive to offer a wide variety of proteins and want to make exciting options available for our customer’s menus and restaurants.

Evans works with both domestic and international suppliers to stock our game selection. While most of our game products come from various areas of the United States, our venison is sourced from farms in New Zealand. We want to provide our customers with the highest quality of venison, and Cervena’s approach of hormone-free, antibiotic-free, free-range farming allows us to do just that.
