New Lamb Supplier: Border Springs Farm

Nestled at the base of the Blue Ridge Mountains in Patrick Springs, Virignia sits Border Springs, a small family farm raising Katahdin and Texel sheep, as well as working Border Collies. Border Springs offers high quality lamb due to breed, forage, and age of their livestock.

The sheep are pasture raised on perennial ryegrass resulting in high quality fat, which we all know is where flavor is derived from. All lambs are under 12 months of age, which surprisingly isn’t the standard for most American lamb. No gamey notes, antibiotics, or hormones added, just delicate, sweet, flavorful meat.

We’ll be carrying racks, bone-in loins, porterhouses, shanks, bone-in and boneless legs, ribs, saddles, necks, and grind based on availability.
