Situated at 6600 feet above sea level, Il Porcellino utilizes climate and altitude to mimic traditional salumi practices of Italy and Spain by using clean, cool mountain air in drying rooms, creating a unique terroir. Their salumi is all-natural, small batch made from 100% GAP Certified Heritage Breed hogs raised on small family farms. Cured naturally with sea salt and celery juice powder, seasoned with fresh, premium spices, and infused with locally made wine and liquor, they pride themselves on every ingredient. Handcrafted from start to finish, from stuffing and hand-tying, to moving from slow fermentation to drying rooms, and hand packaging, each step is a labor of love resulting in undeniable flavor.
